Thanks, Anushri. Unfortunately, that solution didn't work for me. Actually, all the icons look fine in file explorer. They only look generic on the start menu. The people at the windows 10 forum had me rebuild the icon cache, but that didn't work either. I have a laptop running 10 and the start menu icons are fine there. Go figure.
I should point out that it's pretty much only the Adobe icons that won't display properly on the start menu. Other app icons (including many non-Microsoft ones) look fine.

I resolved this issue.
My solution :
- go to the Adobe installation directory in your hard drive
- Copy/Past on your desktop the application shortcut of the blank icon
