Bulk Replacing Text Variables...is this even possible?

I know this is a long shot, but I'm looking to replace a ton of text variables at once in a single InDesign document.

The goal here is simple: I'd like to be able to bulk edit a ton of text variables inside Excel or a similar interface. In all cases, the text variable names will remain the same (Column A); it's the custom text that changes from set to set (Column B).

Right now, I'm having to manually edit each custom text element one-by-one. With one or two text variables, that's not too bad. But I'm looking at setting up a document that will have around 50-60 variables, and the InDesign interface seems to get a bit cumbersome in that case:

I have started reading a great deal about data merge but I'm not entirely sure if that's the route to go regarding replacing text variables. Does anyone know of any solutions I can explore that enable a bulk replacement of text variables inside InDesign?
