You really need InDesign to do the book layout. If the only "editing" you will be doing of the pictures is cropping, that can be done in InDesign as well.
Although you can 'crop' and resize pics in InDesign, it's probably better to size and optimise them roughly to the size you'll want in Photoshop first, especially if your final output is going to be be ePub. I'd produce one set for print and one for eBooks.
It may be worth pointing out, in fact it isn't realised, that design professionals do not use just one app. They use InDesign for page layout, Photoshop for scans, photos and certain kinds of graphic, and Illustrator for other kinds. Trying to do everything in one app, even where it is possible, is a recipe for problems and pain.
