Star ratings and color attributes are mainly used to organize the images.
I would like to inform you that there is no option available to see the star ratings or color labels in the import dialog box of Lightroom.
You may go ahead and post a feature request.

I have the Import article for you, which explains everything whatever can be done on the Lightroom Import window.
Also, whenever we talk about the ratings and color Labels on the Images in Lightroom, we have to do that after we import the Images in Lightroom.

This can be done using a few steps:
1) Import the folder(s) containing the desired image files (including those not desired). Select 'Add' and 'Minimal' Preview to speed the Import process.
2) Use the LR Filter bar(s) or Smart Collections to select images with the desired rating and color label.
3) Edit the selected image files.
4) You could also use the Filter bar to find and remove (not delete!) the image files you don't want to edit. This will not save you much in hard drive space when using 'Minimal' preview in the Import module. Leaving the rejects in the LR catalog allows you to review ALL of the the image files inside LR, which is a plus without significant overhead.
If you change ratings, color labels, or add keywords inside LR don't forget to use the CTRL + S keys to update the file's metadata. Otherwise those changes will not be visible inside Bridge. Likewise when making metadata changes inside Bridge you will need to select ALL image files and go to the LR Library menu Metadata> 'Read Metadata from File' to update those changes in LR. It's not as hard as sounds.
