You need to use tools like Mettle's Skybox Studio to convert the various projections and add your elements.

Nothing that's automatic. Adobe has not spent very much time on features that only an extremely small portion of the user base would use. I personally have not done any 360º projects in AE but there may be a convoluted way to fake it using some combination of effects but since you have not told us exactly what you are trying to do with the text layer it's impossible to point you in the right direction. Simply overlaying text on one of the views should be fairly easy, creating a text layer that sticks in place as the view rotates around is a whole different thing.
