How do I access  Japanese features such as Ruby text?

I'm new to InDesign and am hoping to use it to recreate a Japanese textbook in pub3 format. I'm on a Mac with CC 2015 version of InDesign.

I have set Adobe Japanese Paragraph Composer as the default composer. I can select a Japanese font, create a text box and type Japanese in the textbook, but I don't know how to access Japanese features such as Ruby text. I can see that in the InDesign folder in the Applications folder there is a folder called Plug-ins and in it are a set of CJK plug-ins including Ruby. Can anyone tell me how to access those Japanese features?
