I would definitely NOT call the webservice for each row update.
I don't know CF, but I am sure you could package the updates on the client in some form, an array, or my favorite, xml, and have CF build the UPDATE or DELETE+INSERT queries.
That's what I was leaning towards. Any Coldfusion people know how I might accomplish this?

No I never did and I'd love to have an answer to this...
I think I can help you from a ColdFusion point of view - did decide on whether you would pass an array or XML? If you have any code to work with, that would be great.
Can't speak for epsnowden, but my main question is how to prepare this update on the Flex side. Once I figure out a good way to send an array or a long xml string to the CF server, I'm sure I can handle it on the ColdFusion side.

So to repeat, does anyone know an elegant way to send updates to a Flex datagrid back to ColdFusion? For extra credit, I'd prefer to only update rows that were changed.
