I'm working on a document created by a former employee, last edited roughly 9-10 months ago. She converted type to outlines before sending it to print, and I can't find a separate copy saved before outlines. Is there a way to undo that at this point, so that I can edit the text?
No. It's like trying to put back together an egg after it has been broken.
To minimize the rework, OCR the page(s) you have. This can be done in Acrobat with scanned images, and you can export a jpeg from Indesign to start process. Hopefully in the Indesign doc, paragraph styles remain that can be used to easily format the text. Place OCR text onto a layer, leaving outlines on a locked layer for reference, format text.
