Acrobat Reader With iPad Touch Id

We have been asked to create and deploy Work Instructions (which are clearly defined procedures) on iPads for engineers to follow when carrying out work. The Work Instructions are to be Adobe Acrobat files. The engineers will be working in an environment which prevents any form of WiFi or other network communication. At specific points in the Work Instruction the engineer must obtain authorisation from a manager to proceed. We want to use the iPad's Touch Id to provide an authenticated method of digitally 'signing off' the work allowing them to proceed.

Can anyone suggest if this can be done, if there are any examples of this or if there is an alternative approach we should be considering.

      Thank you.
