In Acrobat how can I set a PDF document to expire after a certain date and become unreadable ?

I basically want to stop for-profit course aggregators like Course Hero to sell my homework solutions pdf file posted on my class web site.

You need a DRM solution for that, like Adobe LiveCycle, and it is not free nor cheap. There are ways to do that with PDF encryption in Acrobat, either password or certificate, but you'll have to figure out how to provide the key to the recipients of your PDFs.

With certificate encryption you need to know all possible recipients of your PDF before you encrypt them (and they'd have to procure and send you their public-key certificates to include in the encrypted PDF). With password encryption you need to figure out how to communicate the password to all possible recipients of your PDF in secure way, so that Course Hero does not get hold of it as well.
