Your screen-clip shows Exposure set to 0.10 that is 1/10th of a stop. How do you see 10 stops exposure change?
The Temp slider is at '1' If you are looking at a JPG image then the slider should go +/- 100.
Holding down the SHIFT key will 'Slow Down' the sliders for a smaller movement of adjustment slider.
There is two methods for data entry: (1) click on the number and type a new one, (2) use the slider from the mouse.
The sliders are based on distance traveled; there is only so much granularity to play with. To get finer control with the mouse you need to make the panel wider by clicking and dragging the border.
