Please make sure that the form is Reader Rights extended. ( File -> Save as other -> Reader Extended PDF -> Enable More tools. )
And then fill the form and send it to your e-mail.

When I email myself the completed forms and try to open them on my Iphone, I cannot see the filled in information. I only see the blank shaded areas.
Did you email the completed PDF forms from (a) your iPhone or (b) your Windows/Mac desktop computer?
Are the PDF forms (that are sent as email attachments) opened in Adobe Acrobat Reader or Apple Mail preview?
Apple Mail provides the PDF preview capability but does not display filled form fields properly.
Would you please take a look at the "Open from Mail" section of the following FAQ document to ensure that the PDF forms are opened in Acrobat Reader (not Apple Mail)?

I opened the PDF attachment in Apple Mail, used the iOS "Open In" (or "Copy to") feature to open it in Acrobat Reader for iOS, and filled in one of the text fields. I did not find any problems with your PDF form.
What is the version of Acrobat Reader for iOS that you have on your iPhone?

Hi. I have the same problem. I'm using iPhone 7Plus. Recently updated the Adobe Acrobat app.
I opened a PDF file from email using "open in" to Adobe Acrobat app with ease. The file is form fillable so I typed in my answers and saved them within the app. But when I emailed a copy (using "share file") to my colleagues and myself, my answers weren't there. It was blank. I tried to "open in" iBooks and still came out blank.
