It's not just key frames, it's any task I add then delete... Is there any way of rolling back to the previous update? This version for me is unworkable.

There are a number of threads with people describing an issue similar to yours. The issue seems to happen on both Windows and Mac, but only for a small number of people. Finding out what's causing it seems to be a bit tricky.
Before you roll back, Adobe needs information to help them squash this bug. See this post from a similar thread: Re: Undo doesn't affect preview
To roll back, click on the Previous Versions option in the Creative Cloud app.
Someone in another thread said,
Try to open after effects with the option "run/open as Administrator". This option appears when making a right click on the program icon.
So give that a go before you roll back too.
I rolled back to my previous version and then reinstalled the new version again, seems to have solved the problem for now. Every thing seems to work fine.
I found out that this is a common problem with the new version!
We are very keen to isolate the causes of these issues. We have a couple of engineers visiting someone having this problem tomorrow so that they can debug the issue.

The issue is that the information held by the render thread is getting out of synch with the information held by the UI thread. This kind of problem can be worked around by either restarting the application or purging the caches---either of which forces a re-synchronization of these sets of information.

I've reinstalled on 3 machines and all seem to be working ok.
Spoke to soon, I used all yesterday and seemed ok, But started using this morning and had some issues with the shape layer not working when I put a skew on it.
Cleared the cache and refreshed correctly.
I'm re installing again, hopefully some issues have been rectified and a reinstall will work....
Re-installing will not help this issue.
We have isolated the "stale image information" or "bad cache" problem. We have a fix in hand, and we're testing it now. I am hoping for a bug-fix update to be released with this and three or four other fixes in slightly more than a week.
In the meantime, purging the caches or closing and reopening the project are the best ways to work around this issue.
