The edits are stored in the catalogs that you have created. Catalogs are stored by default in the Pictures\Lightroom folder. As you have discovered, it can become a nightmare trying to manage different catalogs. I think you are making a huge mistake. It's much easier to manage a single catalog. You can separate your imports into different folders if you want. And you can add keywords to make finding images very simple. It can be a nightmare trying to manage catalog backups for different catalogs with as many as you are creating. A single catalog is definitely the best way to manage your images.
I cannot relate to the issue you are facing.
Are you unable to find edits on your images or you cannot find the Catalog you were working on?
You could check for recent catalogs under File<<Open recent in Lightroom
Christy, you must take the advice of Jim Hess above, and only use ONE catalog.
If you want to "Combine" all your current catalogs into one, there is a procedure that will achieve this-
eg. If you have 4 catalogs A B C D
You would open the 'A' catalog and choose Menu > File > Import From another Catalog, select the 'B' catalog to merge 'B' into the master 'A'.
Repeat to merge the 'C' catalog into 'A'
Repeat to merge 'D' into 'A'
When all catalogs have been merged- 'A' is your one and only catalog, you can delete B C & D catalogs from your computer. (the .LRCAT files and associated Preview folders)
If you have edited the same image in multiple catalogs then you should see 'Virtual Copies' for the multiple edited versions in the merged 'A' catalog.
Be certain you never delete your image files!
I tried selecting a few of the photos that I had completed my editing on and I clicked on new catalog by mistake. Now the catalog that had all of my images that I was working with from the weekend is nowhere to be found.

Use the menu command File->Open Recent, select each catalog in that list until you find the catalog with your photos
I have been working from one main catalog. I was simply trying to group a selected few for exporting and accidentally hit "create new catalog". Now all of my images and the main catalog can't be found. I have searched recently opened and it is not the correct catalog either. It is giving me an older one. I'm not sure how the catalogs are split. I simply open Lightroom and hit import photos and videos straight from my memory card, then they all go into one place.

Use your operating system's search feature, search for all files whose name ends with .LRCAT. You should double-click on each one that is found to open them and see if it is the catalog you want.
