Please provide more details regarding the issue you are facing with application and OS you are working with?
I'm using Acrobat Reader for iOS (iPad Pro). When I pull up a document to view and annotate, I'd like to be able to mark it up with the Apple Pencil using the standard red ink color you provide, but if I'm going to have a client sign a PDF copy of a contract / agreement, then it'd be nice to have alternate colors available, as well as line thickness. However, red is the only color that comes up. I hope that helps...please let me know if you need more information, and thanks!

In the Comments mode, you can use either the Pencil (a.k.a. Freehand Drawing) tool or the Signature tool.
The default color of a drawing annotation is red, whereas the default color of a signature is black.
It sounds like you are using the Pencil tool (the icon shown on the left) to sign a document. Is that right?
You can tap the existing drawing or signature annotation to bring up the context menu and change the color.
