Try something like this . . . Not 100% sure on this but I know I have accessed the header text this way . . . .
myDataGridColumn : DataGridColumn = myDataGrid.columns;
myDataGridColumn.visible = false;
Obviously you change 0 to whatever column you want to hide. . .

It' s impossible that flex give us the possibility to hide only the header of all columns...

If you hide the header, then the space it occupies will still be there, so
the rows will line up. Try using a headerRenderer wit one state that shows
the header text and one state that shows nothing.
