Using an app called My Permission I control which apps have access to my personal info. Adobe is requesting access and is preventing me from controlling whether or not I want it to have that access. Why is that? And what exactly is the information that Adobe is requesting access to?

Which platform (Mac/Win/iOS/Android), which os and its version, which version of Adobe Reader (including minor)? You mentioned My Permission app, which is for mobile devices, which makes me think that you are using mobile Reader. If this is the case, then AFAIK mobile Reader does not support digital signatures and encryption, so this forum is not the right place. Perhaps you need to ask your question at CLOSED Reader/Acrobat DC for mobile (Read Only).
