Sorry for taking so long to respond. You can add color to your brushes once you open them in Sketch.
Long-pressing (pressing-and-holding) on any of the brushes in the Sketch toolset will open a menu with more brush options. At the top of that menu, tap the My Library link (if you're brushes aren't in that library, tap the Change Library link at the bottom of that menu; it will give you other library options). Tap whichever brush you want to add to your toolset.
Once you've selected a brush and it's in your toolset, tap on the brush to bring up the Color/Settings menu for that brush. (Tapping on the Color circle is where you can change the brush color.

My issue is with Adobe Capture and creating my own brushes. Having created my own brush in Capture, when used from the My Library in Sketch, what ever color I assign the brush it comes aout black. I am guessing knowing the right settings in the presets window of Capture (Capture > Add brush > Edit > Presets > color, flow, velocity etc.) will solve my issue. Is there an explanation of these settings anywhere?
OK, I wasn't sure where/when you wanting to color your brushes but had a feeling you wanted to do it in Capture. Brush CC used to have the ability to try out different colors within the app. That feature was, for some reason, removed for Capture CC.
I'll pass your comments on to the team as a request to add the feature back into Capture.
Thank you for persevering but I am not been understood, it may be I don't undestand Capture.
Having created my own custom brush in Capture, I would like it to behave in Sketch like a preset brush. In Sketch, for example, when you asign red to a preset brush it will paint red. If I asign red to one of my own custom made brushes, created in Capture, it comes out black.
Therefore, in Capture, I must be doing something wrong in creating and editing my custom brush. I don't undersrand what all the presets adjustments do. For instance one of the adjustments is 'Color' with options for B&W or RGB. I have tried both but the reults appear to be the same. Do you know if there are instructions somewhere for these settings and what they do?
Sigh... I'm sorry. OK, I think I understand now. (I hope.)
There is a bit of information about brush presets in this tutorial (Step 4 of 9), Create a custom brush from a captured image | Adobe Creative Cloud Mobile Apps Tutorials, but it sounds to me that when you set the color in Sketch, you're not actually saving it to the Brush because, as you mentioned, no matter how I save my brush (rgb or b&w), the color I assign to it in Sketch holds.
Can you tell me how you're saving the brush and its color to your toolset in Sketch?
I have just gone throught the process again but this time it has worked. Annoyingly I am not sure what I did differently.
I took a photo of my mark. Cropped it accordingly, under style tab clicked Photoshop Scetch Brush. Under presets tab set flow to 75%, Color to B&W, velocity 15%, and flow 0. Saved.
Back in Sketch, I picked the brush form My Library and it seems to work fine. It could do with some fine tuning but the color is correct at 100% opacity and at 10%. All good.
Capture is such a brillient app. Thank for the help.
I can take no credit for helping... primarily because I kept getting things wrong. I'm just glad it's working for you now.
One thing I was wondering if you were remembering to do initially: Tap the + icon to save the color. (It's super easy to overlook; especially when you're so focused on the brush.
