I'm posting the correct answer here for the benefit of other users who have the same issue:
"This appears to be a bit of a bug (on iPad Pro usually with Pencil) in the current version of Sketch. It seems to resolve by uninstalling the app, rebooting the device, and reinstalling. Can you give that a try? (Make sure to sync your work before you uninstall the app.)
A Sketch update, that resolves this issue will be in the App Store in the next couple of weeks. "
