Would suggest you to copy the catalogs again.
Go back to Desktop > Launch Lightroom > go to edit menu > Catalog settings> check the location of Catalog > quit Lightroom > go to that location and copy the catalog again and move it over to your laptop.
Also, once you would get the correct catalog on Laptop, images would show up as missing which you will have to relocate.

Are you sure you are opening the right catalog? You say that there are two catalogs.
I would do this but there is nothing to copy. The catalog is completely empty. when I try to open the catalog, it just appears empty. There are no "! missing images" icons on anything. There are no photos. It's really odd.
First you need to make sure that you have copied over the correct catalog.
If its not the correct one, you need to follow the initial steps in my last post to copy the correct catalog.
Yes I'm definitely opening the right catalog. I've tried opening both. They "open" fine but are completely blank. I recorded a short clip to show me trying to open either catalog. 2016-02-29_1437 - cpfmike's library
You'll see that even though Lightroom opens them, they appear to be empty. Again, this happened seemingly overnight after I copied the "my pictures" folder (which has my lrcat files in them) to my new laptop.

I believe there might have been some mistake while copying.
You should go back to your desktop and copy the catalog again

Even if there was an error with copying the lrcat, it doesn't address the issue of why the catalog doesn't even show up on my old pc. I forgot to mention, that video clip was recorded off my old PC. Not my new one.

In a glimpse of that video, I saw that you have a list of catalogs under Open Recent menu.
Go to File menu > Open Recent > open those catalogs one by one and check which one contains all your edits.
Yep, tried that. All those recent opens were me trying to find the main catalog I used. I managed to find a couple of catalogs still intact but they were not my main catalog.
Do you have backups of your catalog files? If so, restore them.
I usually do backups every other week. What's funny is that all my backup folders are missing. They are normally saved within my lightroom folder. This is very perplexing.
You should search for Lightroom backups on your desktop or for .lrcat files to look for the main catalog.
Yes, you need to use your operating system's built in search feature to search all hard disks for .LRCAT files.
If that fails, you might want to try using something called an "undelete utility" to possibly recover these files even though they appear to have been deleted. If you are going to do this, do not perform any other work on your computer except to find such a utility, donwload it, install it, and run it.
In the future, backups should NEVER be in the same folder as your active Lightroom catalog. Backups MUST be on a different physical disk.
