Create a text object. On the properties panel, set its type to "Input Text". Done.

There are not option for that. It is possible with hand-coding.
Canvas mode does not natively support any GUI widgets whatsoever. You get text, bitmaps, and some basic vector support. For an input field, you'll have to layer an HTML input element on top of the stage. Example code for adding HTML elements here:
Using that function, you could for example do:
makeDiv(0, 0, 200, 50, "<input type='text'>");

And customised it as below. I don't know if it's elegant, or best practice, but seems to work OK.
