Is there a way in adobe to create a document (ie letter) with blocked type paragraphs? I have to create a number of business letters and wish to create a pdf where the user enters information such as the date, receivers name and address and senders name.

Acrobat is not a very good document creator or editor. It is better to use a program specifically designed for authoring word documents like MS Word, Apache OpenOffice.org Writer, Liber Office Writer, or FrameMaker and then create the PDFs from that application. You can add form fields in Acrobat but you need to provide space for the necessary form fields. If you want dynamic form fields and dynamic pages then you need to use LIveCycle.

You will also need to know and understand what the various versions of Reader  your users will be using since any version of Reader before XI cannot save a PDF form with data unless the form has had special Extended Reader Rights applied to the form using Acrobat or a LiveCycle Rights Server.
