You cannot add and split text on 2 pages in Lightroom.
Also, Could you post a screenshot of the image shown in 2 pages, so that we can have a better idea.
It should be possible. If you select your page (highlighted yellow) and click the drop-down arrow near bottom right you can change the page layout to double page spread (see image below)
It should then be possible to hover with your mouse to find the text area. You can select custom text or caption etc in the right-hand panel together with font size and color.
Unfortunately it will only work by clicking the right-side photo cell and using the place holder for photo-text. That obviously puts a limitation on the amount of text that can be displayed.

So it is back to Photoshop for this-
1. Open the landscape image
2. Resize the Canvas size to the book double page size. (eg. 24x12in)
3. Select Text tool, drag a text boundary box
4. Copy and paste any suitable text using fonts, size, color, etc
5. Save image
6. In Lightroom book insert image on a full double-page photo spread.
