What exactly do you expect to happen? You selected the link to be invisible, so why should a line appear?
Is the link clickable? Does it work when you click it? The "mailto:" format is the correct one, by the way.
I would like for my email to become a link this email example does.. firstname.lastname@example.org
The link is not clickable on my document after those steps. I selected invisible because I do not want a box around my email. I also tried the other way though, "visible rectangle" and nothing happened..

If you expect the color of the underlying text to change, that's not going to happen. The best you can do is set the link box as visible, either as a full box or as an underline, etc.
Also, the mouse cursor should change when you hover above it, but that's it.

Of course, you can always change the text color manually, using the Edit Text & Images tool.
