Could you please tell if this is happening with a single document or with other documents as well?
Also what version of Acorbat reader do you have?
Does it show any error message when you are trying to add notes?
Same issue in premiere pro, premiere crash when i type Chinese, but copy and paste is fine.

I just switch back to Vegas Pro 13 just for this, please fix!
I have the same issue too, below is the error event on my machine, when typing chinese with "Cangjie", for example, type chinese character "來", when i finish typing and select this character, adobe reader will crash indeterminately, some time it will just work fine...

Have you tried with another pdf file and see if this behavior continues?
I have tried another pdf file and just the same. I open the pdf with Acrobat Reader DC, select the text field on pdf form, change the input method "Cangjie" in typing chinese mode, some chinese will work, like "馬", but when i want to type second character "來", after i press space to select this character, Acrobat Reader DC will crash.
This behavior is somehow very indeterminately, especially after you first typing some english character in the field and deleted it, then typing some chinese characters may work.

Could you please try repairing Reader and see if that works.
Launch Reader>click Help menu>select Repair Installation.
I have the same issue on two machines, I don't think a repair installation might help.
