I have that camera and use LR CC 2015.6 and continue to have all the expected camera profiles.
Seeing "matrix" does usually mean the profile files, themselves, are missing or inaccessible.
If you're on a PC you can check this folder to see if the profile files are still there:
C:\Program Files\Adobe\Adobe Lightroom\Resources\CameraProfiles\Camera\Canon EOS 7D Mark II
To get them back uninstall and reinstall, first LR CC 2015.0 then the update, both available as manual downloads from here:
Thank you. I uninstalled and then reinstalled LR CC and those profiles are back. Instead of the Adobe profiles I used to have I now have camera profiles. Adobe Standard is the one exception. Thankfully all my plugins remained!
You should have one camera profile called Adobe Standard and then six so called Camera-match profiles (pictured above) for a total of seven Adobe-supplied profiles for the Canon 7D Mark II.
