- Automatic, smooth overflow of text from one field to another is not possible in a PDF.
- Make sure you set your text fields as having Rich Text Formatting (under Properties - Options). That will enable the user to insert bullets (manually, there's no built-in command that does that like in Word), set the font color (as well as other settings) of parts of the text, etc. They can do it by opening the Properties Bar (Ctrl+E) when editing the text in the field.
Thanks for answering my queries, I have the text fields set as Rich Text Formatting in Acrobat but when I try to edit it in Reader I cannot find an option for changing the colour of the text I only want to change the colour of certain sections not all the text, doo you know if that is possible to do in Reader.

Yes, it's possible. You need to select the text you want to edit before setting the font color in the Properties Bar.
