the separate dimensions feature is only available for the position transform and not any other value in After Effects. if you need more control over the POI, and to separate it's dimensions you can do this via expression to a 3D Null's Position, and then you can separate the Null's position. you are basically connecting the Camera's POI to another dummy layer's position through a code that says - this controls that.
1. Add a Null to the Scene and Make it 3D
2. Expose its position parameter
3. Press Alt on the stopwatch for the Camera's POI and you will enable expressions for this value. now use the pick-whip and drag it to the position of a 3D Null.
now you can use the Null to separate the POI dimensions and key frame it instead of the Camera's POI. and enjoy manipulating the value graph.
