Can you describe the problem more fully? Lightroom does not change the size of the original images. You can export images of different sizes by changing settings in the export dialog. What is happening that limits the size to 5 x 7?
It changes from a large photo to a photo that can not be enlarged any larger than a 5x7.
Yes, I agree with JimHess, what exactly are you seeing that tells you this? Explain in detail or show us a screen capture.

To add to the other replies. LR doesn't change the image at all even after making multiple adjustments to it. That is the whole point of LR. It never changes the original image. So I'm not sure where or how you are viewing the size change.
A RAW file is sized by the number of Mega Pixels of the sensor that took the image. That never changes on the original image.
Cropping the image will "discard" pixels to make the image the shape you want it.
In the Export dialog, the "resize" options will reduce the number of pixels as instructed by you.
