Download your application to your computer. Change the extension to .zip. Then unzip the file (.ipa and .apk are actually just zip files). You can then begin to inspect the folder to find your assets.
Thanks a lot for your prompt reply, the apk would actually contain the html, js and all relevant assets, but the config.xml file was not included, or I could not find it, it contains a lot of tweak I had to add to get the app working properly, and it would take me time and a lot of experimentation to get them all wrapped up again, so all I need right now is the latest version of config.xml that phonegap used for building.

It's gotta be in there somewhere, since config.xml is read at startup.
If you're on a *nix/BSD system (running from the root of your APK, unzipped):
find . -name "config.xml"
And that should find the file wherever it is in your archive.
