using adobe acrobat DC, I do not have the option to print to pdf or print to file.

That's correct. Print to PDF hasn't existed since Mac OS 10.6.

But you can export a PostScript file and manually distill that. I don't know why you would want to do that, but that is possible!

PS:     Apple removed the capability of Adobe creating an Adobe PDF printer. This wasn't Adobe's choice.
