What type of security should I use?

Any help on the below would be much appreciated.. I can't seem to get a clear solution.

I create editable PDFs (wedding invitations). The customer downloads the PDF and adds their own wording into the form text field set-up for them. They do this in Adobe Reader (free version). Our forms are obviously set up in the Pro version.

I don't want to use password security as this causes a lot of issues when the customer goes to print (especially when uploading to an online printer - it just doesn't let them). Basically, the only security I really want is to restrict anyone from altering or changing the form itself in the Pro version if they have this version.

Any Ideas?

There is nothing you can do to protect yourself from a motivated person for more than a few minutes. Best to avoid inconveniencing your paying customers for the sake of this.
