I'd put one of the 9-sliced images into a simpler component type and see if
that's set up correctly. Image can be kind of wonky for 9 slice, so I'd
maybe look at setting it as the bg for a Canvas and then play around with
the size of the Canvas.

As you suggested I tried to see what happens when applying the skin to a canvas, but nothing striking happened, as expected as the skin applied is an SWC specifically made to be a button component skin.
The 9-sliced scaling seems to be working fine. My buttons stay in the correct shape as intended without any distortions. It's the labels that are being stubborn. Or, to be more precise, it's the width of the buttons that are not large enough to compensate for the longer lables.
