I have created an mobile app which is meant to be running on devices 24/7, using phone-gap to build.
Data is always moving throughout the app, and updates need to be constantly shown on the device.
The issue has arisen, when after 24 hours (give or take), the application suddenly closes and an Android error is shown that the app was unresponsive.
My first thought was that there might be a memory leak and that the application was force closed by the device itself..
What do you think might be causing the issue?

I would lay odds on some sort of memory pressure situation, either from a leak, or from something else you're doing in the app that eventually consumes too much memory for Android's liking.
You might want to try attaching a Chrome remote debug inspector to your device while testing as well and periodically profile your memory use.
