I set up a RSS feed for a blog in Business Catalyst. Right now it's showing the meta description, title, date, and then the full post. Is there a way where I can have it display the first paragraph with a "continue reading" link instead of the full post?

Another option is to pass BC's feed through a service that can transform it. For example, FeedBurner has a "Summary Burner" feature.
