I understand your query and the concern related to the proof of purchase.
The license history would really be a good option to show to your client as it captures all the details of the images/files that you have licensed.
You can login to your Adobe Stock account and on the Top right under your name you will find the License history section.

This is not enough. In your portal you can do virtually anything. By purpose or by mistake. How can I proof in court that I really bought the picture when it disappears from your system?
Why can't you answer me publicly? Is there anything to hide?
