Importing files from illustrator to photoshop causes them to become greyscale

That's basically the issue. I've had it before - and photoshop help told me to rename the file to reset colour settings but I cant remember how to do this

What is the format of the image you are taking from illustrator?

What exact steps are you using to import it into Photoshop?
