Sorry for the delayed response and inconvenience caused. To turn on automatic OCR:
- In the right pane, select the Recognize text check box. From next time, Acrobat will automatically run OCR and convert a scanned document to editable text.

I have had the exact same problem, but this suggested solution does not work. So the answer is NOT CORRECT.
The solution certainly helps in other contexts -- such as whenever I enter "Edit PDF" mode -- but I instinctively just select "Find", and it doesn't recognize the text when I do that ... so if I'm working too fast, I don't realize that this PDF wasn't OCR'd.
HOW CAN I TURN IT BACK ON SO THAT IT WILL AUTOMATICALLY REMIND ME WHEN I HIT FIND ... LIKE IT USED TO?

In the preferences of Adobe Acrobat click on "Reset All Warnings".
