I have been sent a PDF to sign which has been signed by the sender but there is no signature field for me to sign. How do I sign or do I need them to add field and send again

If the sender of the form has already signed and then its sent to you, then you would not be able to add your signature on it. Unless the signature field has not been assigned to you.
Ask the sender to apply a signature field for you to sign the document.
