I am completely lost with all those new versions. I used to work with Acrobat 7.0 Professional at work. Now I wanted to purchase it for myself but I can't find it anymore on the Adobe website. What is the exact new equivalent of this? Is it the one called Acrobat DC Professional? Would I be able to find in this version all the features that I had in Acrobat 7.0 Professional, like pdf creation, text and graphic edition, form creation, signature, insert/replace/delete pages, etc.??

Yes, Acrobat Pro (or Standard) can do all of that.
The DC version is a subscription (yearly or monthly). The 2017 version is a perpetual license.
The user-interface is quite different to what you're used to, but all the functions should be there.
