Very good courses. I forgot to mention that spent some time studing "Flex 3 Essential Training" videos. Maybe it's a good idea to watch "Flex 3 Beyond the Basics" too.

Create desktop applications, using Flex and AIR.
The best thing you can do is to go through these FlexBuilder help topics and all their sub-topics TWICE. It will take several weeks, but if you go through all this material TWICE, copying and compiling all the sub-programs, you will extend your knowledge sufficiently.
