Make sure you are working with a RAW file. From the text of your post is sounds like you are working with a JPG file. There aren't many lens profiles for JPG file because normally the camera includes the profile for JPGs.
Thank you. It was definitely a RAW file (Nikon .NEF). After several attempts I've now uninstalled and re-installed Lightroom and now the lens profiles work as expected. Don't know what happened here. All installations were done by the Adobe Creative Cloud tool.
I just noticed this issue today also and found a reply to a post back in 2016 regarding this. It mentioned clearing the editing history. Not sure how but after clearing the editing history on one photo I could see all the lens profiles again allowing me to apply to one and copy to the rest. Hope it helps you also.
