Well as for iterating through the fields in the Excel worksheet, that involves VBA not specific to Acrobat in any way, so you'd want to post on a Microsoft forum about that.
What you would need to do inside each of your iterations is to use the Acrobat JSObject to set the Doc.info.Subject property to the field you extract from Excel with your VBA script and then save the PDF.
You would need a fully licensed version of Acrobat for this, Reader will not be able to accomplish this.
PDL - the log file doesn't have to be in Excel. It can be a text file, delimited by commas or tabs or whatever is necessary.
I have a fully licensed Acrobat.

You never mentioned that you were restricted to a Mac environment. Unfortunately I do not do much development on the Mac side and the OLE/COM objects (which include the JSObject I mentioned) are specific to Windows, so I can't really give you much advice.

You might be able to use digital imaging software utilities that manipulate the EXIF, IPTC, and XMP data. You can look at Phil Harvey's EXIFTool that is a command line/termianal window program that can read and write metadata including the PDF file format.
