Strange, I don't see this option in the Acrobat print dialog (File > Print). I have to click on "Properties" next to my printer and then it shows up in the printer-specific dialog, which is not controlled by Acrobat (its getting that dialog from your printers driver software).
Have you tried going into your Control Panel, choosing Printers and Faxes, right-click on your printer, choose Printing Preferences and then turning off Collate in your printers settings?
This is a specific property for a given printer and not a feature generally available to all printers. So this property is controlled by the specific printer properties and can not be defaulted in Acorbat so one has to set this on the specific printer "properties" accessed through the Widows system control pannel.
I will also note that not all properties provided by the Acrobat printer UI are supported by all printers. Specifically the "Copies" option.
