In Adobe PDF editor, just go to the TOOLS menu and scroll down to Advanced Editing Tools and select crop. Then make a box any size on the page and double-click it. A window pops up that lets you enter the crop dimensions and bleed values.
I print my own books at qoop.com so I had to get familiar with this. I just upload my PDF documents and they are instantly for sale as books.
So print my PDF from Microsoft Word (I always hated that program but I love their newest version) and I make it larger than the finished size would be. And I select "Press Quality" when printing so all fonts are embeded. Then in Adobe PDF editor, I add the crop and bleed like I describe above.
Or you can also hit CTRL+SHIFT+T and it will open the crop and bleed box
