But you could also give Bridge a try... :-) -

Thanks Omke. A search for 'bridge' produces 478 results, not all related to
Adobe Bridge. I'd have to be very careful in my selection. I'd be worried,
too, that Illustrator and Photoshop might complain or worse if they
discovered that Bridge was missing.
I have tried Bridge but find it much too slow and clumsy for my needs,
preferring a third-party solution.

If you told that you have experienced problems with it I would believe you but slow and clumsy is not what I find :-)
But it makes me curious what third party app you are talking about??
If you want to remove for space reason just put the option show invisible files on in the Bridge menu. That is if you used bridge for caching large amount of files. Do a search for the invisible cachefile with the name '.BridgeCacheT', those can grow to big sizes the more you use a folder for caching.
In user go to the library and look for caches - Adobe - Bridge CS3 In here is a cache file that can grow to 16 GB.
At last you can remove the application itself for another 329 mb free space. -

No, the stand-alone disks allow removal of the main application only. Maybe
the Suite installer allows removal of components?

My only use for it is as an image browser (.eps and .ai in the main) with
basic functions such as re-naming and moving. For this I use Extensis
Portfolio.

Bridge promised to be a lot, also to do asset management. It does but indeed not at a high standard and problematic with a lot of files in one folder.
But it does work very good for sorting, rating renaming and moving files to another location, but after moving cache needs to rebuild and that is a real downside.
If Extensis suits you I can imagine you have no need for Bridge :-) -

I too would like to uninstall the Bridge, StockPhotos and DeviceCentral applications from my Mac but leave the Illustrator CS3 and Photoshop CS3 allications untouched. It's a shame the installer(s) won't apply to particular components.

I simply find the native Apple Aperture and iPhoto applications easier to work with when it comes to organising photos. But for editing and drawing purposes the Adobe suite has been cutting edge for me during the last decade or more.
Anyway, if you did succeed please let me know.. or I'll try it myself and let you know!

I have now trashed Bridge, StockPhotos and DeviceCentral applications and
their associated folders and both Illustrator and PhotoShop continue to
function unscathed.
I tried the same with VersionCue but AI and PS refused to launch.
