Just curious James, but are you opening the D700 and D80 raw files with CS3? The D80 was supported by ACR 4.x and could open in CS3. However, the D700 is supported in ACR 5.x and you will need to upgrade to CS4. Here is the information: www.adobe.com/products/photoshop/cameraraw.html?promoid=DIODR
You get to set the DPI number in the Camera Raw Converter.
When you have your file open in Camera Raw look near the bottom center of the window for a hyperlink that might read something like adobe RGB (1998; X-bit; xxxs by yyyy (xx.yMP); 240 ppi or it might say sRGB IEC1996-12.1; X-bit; etc.
Click on that and select the Resolution setting you want. This setting is sticky and will apply to all files from that camera that you process after you have changed it.

Thanks for your help. I feel pretty dumb after that easy fix. and pretty mad that tech support would not tell me that.
Did you try using the Help files in Photoshop?
