Yes it supports quad cores... and all the cores are used... up to 16 I believe.
I think the Phenom will offer the best performance of the two. And for around $200, it's reasonably priced.

I am puzzled now, because I just got a response from Adobe Italy and they told me that many of their clients are reporting various issues using quad core with CS3. So they advised me to go for dual core. Actually, if you think about it, the official system requirements for Adobe Premiere CS3 do not mention quad core.
Do you have any direct experience of quad core with CS3? You used it without problems?

I edit with a dual-quad core computer and haven't had any problems with it.

I suppose you had no problem with capturing too.
None with capturing that I've found yet.
