I believe most of "300" was shot blue screen with digital backgrounds.
The question is more specific about color/grading in post.

There is no quick way to get the 300 look! Get your own original look.
As Jim said it was easy for the filmmakers to CC the film since it was all made in post. The separate layers are key to getting that much control of the image. The source footage was of such high quality that extreme CC was possible.
Big expensive colour grading machines were used, just play with Premiere's CC and other effects until it looks like 300.
