Have a look at this FAQ on posting to YouTube. It has a YouTube HD formula that you could try.

When I've uploaded high quality video to YouTube, it takes longer for the high quality version to be processed. The standard lower quality version becomes available first.
Before deleting the video on Youtube, wait several hours and then check back. You should then see an option on the YouTube player to view in high quality.

I am now uploading HD quality videos to Youtube and extremely happy with the quality.
FYI the mov files are about half the size of the MPG files that I was generating, meaning faster uploads, so a double benefit.
